This pie was everything a good key lime pie should be: tangy but not overly acidic, smooth and not chalky, and have a nice light mouthfeel. And it wasn’t soggy at all. It wasn’t a perfect key lime pie, either. There’s a debate about whether a key lime pie should have meringue. This one didn’t. The green color is somewhat suspect as well (key lime juice isn’t as green as regular lime juice). But the good more than outweighed the questionable here, and the result was a seriously good piece of pie.
And, to boot, I bought a cool bottle of “Frog Sweat” lime hot sauce, which I’m sure I’ll find a creative use for.
